Perfect Pajeon

A quick, easy and delicious recipe to use up all those left-over spring onions you have in the fridge from the wonderful Maangchi

Prep time: 5 minutes
Cooking time: 10 minutes
Makes: 1 pancake

Ingredients
A bunch of spring onions (about 10)
1/2 cup flour
1/2 cup water
1 tbsp soy bean paste
1/2 tbsp sugar
3tbsp vegetable oil for frying

1. Don’t be a rapscallion!

Give the spring onions (scallions) a wash, top and tail them and then chop into ~12cm long pieces

Pop these to the side and start on the batter by mixing together your 1/2 cup flour, 1/2 cup water, 1 tbsp soy bean paste and 1/2 tbsp sugar together in a bowl to form a smooth pancake-like batter

Heat up a frying pan with 3 tablespoons of oil and add the spring onions in one layer in a roughly rectangular shape (yes we may have skipped elementary geography because this rectangle is decidedly wonky…)

Add the batter overtop of the onions in a zigzag pattern in order to cover as much spring onion as you can and give the pan a wiggle to distribute it a little more. After a few minutes, check it is golden brown underneath and then flip it over to brown on the other side

After both sides are brown and toasty, take it out the pan and pop it onto a plate to serve alongside a dipping sauce. We just used the remains of the marinade from our mayak eggs we made at the same time, but there’s a good-looking sauce recipe on Maangchi’s Pajeon recipe page too

Kate says: “This was part of a last minute cooking marathon Lizzy and I accidentally partook in when she came to visit over Easter. We needed an easy and quick lunch and this certainly fit the bill! I really liked the dish as whole but I wouldn’t be able to eat the WHOLE thing, it was a little too claggy and big for me, I would like just a little bit amongst a smorgasbord of other Korean delicacies, so perhaps I would make a smaller one next time. This is a perfect store cupboard lunch to have in my repertoire because I am very likely to have spring onions in the fridge at most times 8/10
