Hot Kakósúpa

An excellent little winter warmer, this recipe for Kakósúpa is from the very funny “Soup Tuesday” series from The Rekyjavik Grapevine We highly recommend reading their recipe for some fun and hijinks

Prep time: 5 minutes
Cooking time: 20 minutes
Makes: 2 bowls (or large hearty mugs)

Ingredients
200g dark chocolate
750ml milk
1 1/2tbsp of corn starch (or potato starch is more authentic if you have it)
1 1/2tbsp of sugar
500ml water
Milk biscuits, double cream, oats and a glass of milk for serving

1. Now now, don’t milk it

Warm your your 750ml milk and 500ml of water in a large saucepan to just before boiling and melt 500g dark chocolate in your microwavé or in a double boiler if you are that way inclined

Add the melted chocolate to the barely boiling milk mixture along with 1 1/2tbsp of sugar. Dirty another kitchen implement and whisk furiously to ensure no chocolate sticks to the bottom and burns

Make a slurry with your cornstarch and a little bit of water – this slurry making reduces the chances of a lumpy soup

Add the cornstarch slurry to the chocolate mix and stir until it thickens (if memory serves correctly we added quite a bit more than 1 1/2tbsp of cornstarch to get a really thick soupy consistency so be prepared to slurry some more…!) While the soup is thickening, toast your oats ready for topping and add a big pinch of salt to the Kakósúpa to really bring out that chocolatey flavour

Add your topping (oats, cream etc.) as you so wish and dink and sink with a milk biscuit!

Lizzy says: “I was so ready to find this disgusting – the combination of the savoury term ‘soup’ and the sweet ‘chocolate’ just really did not sit right in my head. But! I loved it, it was like a more mellow, savoury hot chocolate and I relished feeling like a sophisticated 18th century literati sipping chocolate from the bowl. My soup did end up slightly lumpy – perhaps a consequence of the mountain of cornstarch – if I made this again I would invest in potato starch 9/10”

Kate says: “I have no idea where I found this particular recipe but it seemed like a perfect addition to the winter recipe roster. I cannot seem to get it into my head that this is a soup as it really feels more akin to a hot chocolate much like the french or mexican hot chocolates we’ve made on here before. I liked this well enough, but maybe mostly the biscuits for dipping and I think next time I would just drink it from a mug. It’s a novel concept though, and I can see it going down a treat in an icelandic winter! 6/10
