
Kokosmakronen, a staple in any German Christmas biscuit box! Gift some to your loved ones this holiday season with this easy recipe. These ones are from a friend in Munich, but are very similar to these from Maple and Mango if you need some more detailed instructions
Prep time: 10 minutes
Cooking time: 15 minutes
Makes: ~12 macaroons
Ingredients
1 egg white
37.5g icing sugar
1/4tbsp vanilla sugar
50g grated coconut
a squeeze of lemon
1/2tbsp of yoghurt
Backoblaten (paper wafers) optional!
1. It’s MacarOOn not MacarON
Put on your best Christmas socks (or your mum’s famous slippers) and get ready to cook. Add the egg white to a bowl and whisk it to stiff peaks

Once peak stiff peakosity has been reached, add 37.5g icing sugar, 1/4tbsp vanilla sugar, 50g grated coconut, a squeeze of lemon, 1/2tbsp of yoghurt and a little pinch of salt

Using a teaspoon add a dollop of mixture to each paper round. If you don’t have any papers don’t worry, just slide a spoon full of mixture into a mound shape on your tray


Once your tray is full of little snowy mountaintops, bake for 10-15 minutes at 150°C until just starting to turn golden on top

Lizzy says: “I really enjoyed making these with Kate, especially as we were both home for Christmas, which is a rare treat, and the recipe was bizarrely cryptic because they were from her German friend’s mum. The biscuits were supper light and a little chewy, unfortunately I’m not a coconut lover so a 6/10”
Kate says: “I basically forced Lizzy to make these with me. I’d made them a couple of weeks before with a friend here in Munich along with many other biscuits (or Plätzchen as they’re called). These were my favourites of the bunch, but the recreation didn’t go so well, I think maybe we added a little too much lemon to the mixture. One benefit is these are super quick and (usually) delicious, so a perfect one to have in your back pocket for when company is coming! 8/10“
