
Fool me once shame on you, fool me twice shame on me, make me a blackcurrant fool with blackcurrants from your Grandpa’s garden? Well then no shame on anyone, we’re friends for life. Recipe from the indubitable Jessica Elliot Dennison,
Prep time: 15 minutes (plus cooling time)

Makes: 2 portions
Ingredients
50g blackcurrants
1 tbsp lemon juice
lemon zest
3 tbsp sugar
100ml double cream
40g yoghurt
1. I’m a (blackcurrant) fool for you
Firstly procure 50g of blackcurrants from your grandparent’s garden, or from the shops if you’re that way inclined. Add the blackcurrants to a pan along with 1 tbsp lemon juice, a little bit of lemon zest and 3 tbsp sugar

Cook for a few minutes until the blackcurrants have released some of their juice and the mixture is bubbly and jammy. Put aside to cool, or pour onto a plate to cool if you are in a hurry

2. Whip it
As the blackcurrants are cooling, whip your cream to soft peaks and then fold in the yoghurt

Once the blackcurrant mixture is cooled, add it to the cream mixture, folding it together gently


Cool further in the fridge if you like, or serve straight away in bowls (or one sharing bowl…)
