Coquito

Get a little coquettish with this Puerto Rican christmas drink called coquito. This recipe is from The Noshery.

Prep time: 1 hour 15 mins
Cooking time:
Makes: 3 cups

Ingredients:
170ml evaporated milk
200ml sweetened condensed milk
210ml cream of coconut
pinch of cinnamon
pinch of nutmeg
1/2tsp vanilla
175ml white rum
cinnamon sticks for garnish (optional)

1. Title of section

Place all of the ingredients into a blender if you have one, or use a big bowl and a peg leg if, like us, you are humble and stumble through life with just the wonky peg. Blend until combined

Refrigerate the drink for minimum of one hour.

Remove from the fridge and shake to ensure everything is combined and to get it a little foamy.

Serve cold in a small glass with a cinnamon stick.

Lizzy says: “I am honestly sat here in the same boat as Kate it seems – I cannot for the life of me remember making this drink.. which I guess is not a vote in its flavour! Looking back on the dink and sink I think it must have been incredibly strong, and I believe I kept trying to add more coconut milk to mellow it out but it didn’t do much to help. I gave the rest to my husband to drink and he seemed to enjoy it? 4/10

Kate says: “I didn’t write a review at the time and the only thing I remember from this is that I washed that cinnamon stick in the cover photo afterwards and used it again for something else. I think part of the reason I don’t remember it very well is I had a sip and then it stayed in the fridge for the next few days before it was thrown away. It was very strong, maybe that’s why I didn’t like it (weird though, because white russians are my favourite cocktail?). For some reason, nothing seems to come close to colo de mono, even though the ingredients are very similar? 6/10″
