
Warming, spicy and crispy, this fried Indian sandwich is the trifecta of a perfect snack. Recipe from Indian Healthy Recipes
Prep time: 15 minutes
Cooking time: 30 minutes
Makes: 6 sandwiches(triangles)
Ingredients Filling:
3 medium potatoes
1/4 cup of peas
1tbsp of oil
pinch of hing
2 green chillies
Knob of ginger
1/2tsp chilli powder
1/2tsp garam masala
pinch of turmeric
3tbsp of coriander
1/2tsp salt
1tbsp of lemon juice
Ingredients Batter:
3/4 cup of gram flour
2tbsp cornflour
pinch of turmeric
1/2tsp salt
1/2tsp carom seeds (we used fennel seeds)
6 slices of bread
Oil for frying
1. Time for some fill-osophy
Firstly separately boil the potatoes and peas, this is because we will need to mash the potatoes! Put them both to the side once ready (oh, and mash the potatoes!)


Meanwhile, in a frying pan add a splash of oil. Chop the two chillies and grate the knob of ginger and add them into the pan. Once they are fragrant, turn off the heat and add 1/2tsp chilli powder, 1/2tsp garam masala a pinch of hing and a pinch of turmeric. Stir this together

To this mixture, add the mashed potatoes, cooked peas, and chop in the 3tsp of coriander. Mix this together to form a paste and taste for seasoning, careful not to just eat the filling on its own… I know it’s tempting

2. Batter late than never…
Mix together the ingredients for the batter (3/4 cup of gram flour, 2tbsp cornflour, pinch of turmeric, 1/2tsp salt and 1/2tsp carom or fennel seeds) then add enough water so it is like a thin pancake batter (we forgot to take a photo of this step, but you will see in the sandwich dipping step how it should look)

Spread out three slices of bread and share the potato filling evenly between them. Such a happy little bread family

Add another slice of bread on top of each sandwich and cut them into triangles. Heat up some oil for deep frying and once it has reached temperature (a wooden spoon dipped in the oil will bubble) then it is time to start frying! Dip each triangle into the batter to coat it fully. We took a french toast approach by leaving them a few seconds to absorb some more batter


Next add this to the hot oil until it browns on one side, then flip over so it has a chance to brown all over.

Take out and leave to drain for a couple of minutes on some kitchen paper.

The problem was, I’d seen these in the film Laapaataa Ladies (hard recommend) and there they looked super delicious so I’d built it up in my head… I still loved the spicy filling but next time I think I would just make a samosa out of it instead – frying the bread in batter was an extra step I didn’t much enjoy. Reading that article, it seems like they are often served with a dipping chutney, maybe that would have made it slightly better but a 6/10 from me!“
