Finnish Porridge

Extend your winter Finnish holiday just a little longer by making a hearty Christmas breakfast of riisipuuro. Recipe from Kitchenfoxtales

Prep time: 5 minutes
Cooking time: 45 minutes
Makes: 3-4 portions

Ingredients
300ml water
130g porridge rice (or risotto rice)
700ml milk
1/2tsp salt
1 almond

1. Have a rice day!

Add 300ml of water to a pan and boil, add in the 130g of porridge rice and continuously stir until all the water is absorbed

Once the water has been absorbed, add in the 700ml milk and continue to stir continuously (stirring is the main ingredient in this recipe), reducing the heat to low so as not to burn the porridge

Simmer and keep stirring occasionally for 40 minutes and then add the 1/2tsp salt (you may need more according to taste) and the almond – this is what makes it Christmassy! Whoever gets the almond gets a wish while biting in to the almond.

Serve with cinnamon, sugar, or any other toppings you wish

Kate says: “ A peek behind the gasp curtain here, it has been well over a year since we made this… So I actually can’t remember much about it, except that I brought the special Finnish rice all the way from Helsinki in my hand luggage after Lizzy and my Christmas trip there. I think it was a nice dish, pretty similar to a rice pudding but it has not really left a lasting impression and I would stick to my regular breakfast of porridge. A solid 6/10 from me, would have been 7 if I’d got the almond!
