
Try out this easy and delicious Irish potato pancake called a Boxty. Recipe from the one and only Donal Skehan
Prep time: 10 mins
Cooking time: 30 mins
Makes: 4 portions
Ingredients:
500g potato
250g plain flour
1tsp baking soda
300ml buttermilk
6 spring onions
1. Do the mash potatoes
First step is to stick on some James Brown and makes some mash with 250g of the potatoes.

Once your mash is ready, peel and grate the other 250g of potato and add to a bowl with the mash, 250g plain flour, 1tsp baking soda and chopped spring onions to a bowl and mix together
Slowly add 300ml of buttermilk until it has formed a thick batter (please note, dear reader, that this picture is probably too thick of a batter – better to thin it out a little…)

Add a knob of butter to a frying pan and fry on both sides (much like a pancakes) until golden brown


Serve with your choice of toppings, bacon, or even some leeks would go nicely!

Kate says: “I think that I didn’t add enough buttermilk to my batter, because my boxties looked more like American pancakes which I don’t think is right… I did quite enjoy them for a light lunch with a couple of nice over-easy eggs but I thought they were just okay. Maybe if I had some potatoes knocking around I would make it again and the good thing is I now have some left over buttermilk to make soda bread but I’m not sure I will be revisiting these any time soon…4/10″
