If it is high noon with you, well that can mean only one thing – tea time, and this salty noon chai (also known as sheer chai) will hit the spot perfectly. This recipe is from Romy Gill’s recipe book On the Himalayan Trail.

Prep time: 5 minutes
Cooking time: 15 minutes
Makes: 2 cups
Ingredients
600ml water
2tsp green tea leaves, or a bag of green tea
Pinch of bicarbonate of soda
2tsp chopped almonds
1tsp crushed green cardamom
400ml milk
1tsp salt
1. Total tea time
This is a super duper quick drink, so get your accompanying snack ready in advance.
Start by boiling 600ml of water in a saucepan with lid. Add in 2tsp green tea leaves (or a green tea tea bag if you aren’t a fancy influencer bish with loose leaf) and a pinch of bicarbonate of soda top get this party fizzing over.
Cover the concotionwith the lid and boil for 10-12 minutes. (If lots of the water evaporates, add an extra 100ml of water to the pot)
After 10 minutes is up, add 2tsp of chopped almonds, 1tsp crushed cardamon pods and 400ml milk.
Bring back to the boil. Add in 1tsp of salt and stir in.
Serve in your favourite mug.

Lizzy says: “I was expecting to be transported to the Himalayas with this tea – and maybe the salt did make it taste a little like yak butter tea – but overall the result were overwhelmingly negative. It tasted fizzy from the bicarb and salt, but sweet. The worst part was it was weirdly moreish, so I couldn’t stop drinking it evern though I wanted to. Kate mentioned that it looked like wall plaster and I mistook that and instantly agreed that it tasted like what a plaster/band-aid looks like… Not the most appetizing description, but apt. 2/10 “
Kate says: “I was quite excited to make this because it’s a very cool chemical reaction, to somehow go from green tea to pink tea!! Amazing! However, the taste was not so good… I’m not sure if it was the salt, or the floating bits of soggy chopped almonds but something about it just didn’t hit the spot. It also tasted a bit like how plaster drying smells. Although, weirdly I have found myself craving it ever since… Maybe I would try once more just with less salt because this one was for sure too salty. 2/10 “
